Tuna Tataki Aguachile

Serves 3-4

Ingredients:
• 1 1/2 lbs fresh tuna loins
• 1/4c thinly sliced red onions seasoned with lime juice & salt
• 2 Fresno peppers thinly sliced
• 1 watermelon radish or pink radish thinly sliced and quartered
• 1/2 bunch julienned scallions
• 1oz micro cilantro or regular cilantro leaves
• 1 avocado


Aguachile Sauce Recipe:
• 1c fresh squeezed lime juice
• 1/2 bunch cilantro
• 1 peeled & seeded English cucumber
• 1/4c white onions
• 2 garlic cloves
• 2 Serrano peppers
• Salt & Pepper to taste

Directions:
1. Blend all aguachile sauce ingredients & strain the sauce, keep refrigerated.
2. Season fresh tuna loins with salt and pepper.
3. Heat up charcoal grill and sear tuna one minute on each side.
4. Thinly slice after tuna is cooled .
5. Plate up your tuna.
6. Top with scallions, red onion, radish, micro cilantro & Fresno peppers
7. Garnish with charred avocado, aguachile sauce & volcanic salt
